Samoa Cookie Protein Bites

Ingredients
- 1/2 cup shredded unsweetened coconut
- 2/3 cup creamy cashew butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/3 cup blanched almond flour
- 1/4 cup ground flaxseed meal
- 2 scoops collagen peptides or unflavored protein powder
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 400°F.
- Line a baking sheet with parchment paper and spread the shredded coconut on top.
- Toast the coconut in the oven for 7-9 minutes until it turns golden brown, then let it cool.
- In a medium bowl, combine half of the toasted coconut with the rest of the ingredients, stirring until well mixed.
- Using a cookie scoop or spoon, form bite-sized balls from the dough.
- Sprinkle the remaining toasted coconut over the bites.
