Samoa Cookie Protein Bites

Ingredients
  

  • 1/2 cup shredded unsweetened coconut
  • 2/3 cup creamy cashew butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/3 cup blanched almond flour
  • 1/4 cup ground flaxseed meal
  • 2 scoops collagen peptides or unflavored protein powder
  • 1/2 cup mini chocolate chips

Instructions
 

  • Preheat your oven to 400°F.
  • Line a baking sheet with parchment paper and spread the shredded coconut on top.
  • Toast the coconut in the oven for 7-9 minutes until it turns golden brown, then let it cool.
  • In a medium bowl, combine half of the toasted coconut with the rest of the ingredients, stirring until well mixed.
  • Using a cookie scoop or spoon, form bite-sized balls from the dough.
  • Sprinkle the remaining toasted coconut over the bites.
