This recipe makes 6 servings and here’s what you’ll need:

One Pan Lemon Chicken Orzo

Ingredients
  

  • 1.5 pounds of boneless skinless chicken breast, cut into cubes
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cumin
  • 1 teaspoon of kosher salt and 1/2 teaspoon of pepper
  • 2 tablespoons of olive oil
  • 1 small yellow onion finely diced
  • 1 shallot finely diced
  • 4-5 cloves of garlic mashed
  • 2 1/2 cups of chicken broth
  • 3 teaspoons of dijon mustard
  • 1 cup of orzo
  • 2 large handfuls of spinach
  • 1/2 cup of full-fat coconut milk or heavy cream

For the lemon flavor, you’ll need:

  • Zest of 1 lemon
  • Juice of 2 lemons about 1/4-1/3 cup
  • 1 lemon thinly sliced
  • 3/4 cup of freshly grated parmesan cheese

Instructions
 

  • Start by seasoning the chicken with paprika, cumin, salt, and pepper. Cook it in olive oil in a skillet until the edges start to brown, then set it aside. In the same skillet, cook onion, shallot, and garlic until softened. Add chicken broth, mustard, and orzo, and cook uncovered for 10 minutes. Stir in spinach, coconut milk/heavy cream, lemon zest, lemon juice, and parmesan cheese until spinach wilts. Adjust seasoning if needed, then serve and enjoy!
