Spicy Chili Garlic Oil Noodles
- 1/2 tablespoon sesame oil
- 3 tablespoons neutral oil (like vegetable, peanut, or canola)
- 2 tablespoons unsalted butter
- 3 green onions (white part and green part separated)
- 1 1/2 to 2 tablespoons finely minced garlic
- 1 tablespoon red pepper flakes (add more for extra heat)
- 1 to 2 teaspoons mild chili powder
- 3 tablespoons grated parmesan
- 3 tablespoons low sodium soy sauce
- 1 teaspoon light brown sugar (adjust to taste)
- Salt (to taste)
- 6 to 8 ounces knife-cut noodles
- Cook the noodles according to the instructions on the package.
- In a bowl, combine the white part of the green onions, minced garlic, red pepper flakes, chili powder, soy sauce, parmesan, brown sugar, and salt to taste. Set aside.
- In a saucepan over medium-high heat, heat the sesame oil, neutral oil, and butter until very hot and sizzling.
- Remove the pan from the heat and carefully pour the hot oil mixture over the bowl with garlic, onion, and chili. It should sizzle.
- Mix everything together well and then add it to the cooked noodles. Toss until the noodles are coated.
- Taste and adjust the seasoning according to your preference. Add the green onion tops and more parmesan if desired, along with extra chili flakes for more spice.
