Oatmeal Crepes

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup non-dairy milk or any other nut milk or milk alternative
  • 1/4 tsp sea salt
  • 1/4 tsp cinnamon
  • 2 eggs

Instructions

  • Add all ingredients to a blender and blend for 45-60 seconds.
  • Heat a non-stick skillet over medium-low heat and lightly coat with non-stick spray.
  • Pour in 1/2 cup of batter, then quickly swirl and twist the skillet to evenly distribute the batter.
  • Once the crepe is almost fully cooked, flip and cook for an additional 15-20 seconds.
  • Fill each crepe with your desired filling, fold, and add toppings.
  • Enjoy your delicious crepes!

Notes

  • Ensure all ingredients are fully blended to eliminate any oat pieces.
  • No blender? No worries; oat flour works too, just mix thoroughly.
  • Lightly coat your pan to prevent sticking.
  • Work swiftly as the thin batter cooks quickly.
