Oatmeal Crepes

Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup non-dairy milk or any other nut milk or milk alternative
- 1/4 tsp sea salt
- 1/4 tsp cinnamon
- 2 eggs
Instructions
- Add all ingredients to a blender and blend for 45-60 seconds.
- Heat a non-stick skillet over medium-low heat and lightly coat with non-stick spray.
- Pour in 1/2 cup of batter, then quickly swirl and twist the skillet to evenly distribute the batter.
- Once the crepe is almost fully cooked, flip and cook for an additional 15-20 seconds.
- Fill each crepe with your desired filling, fold, and add toppings.
- Enjoy your delicious crepes!
Notes
- Ensure all ingredients are fully blended to eliminate any oat pieces.
- No blender? No worries; oat flour works too, just mix thoroughly.
- Lightly coat your pan to prevent sticking.
- Work swiftly as the thin batter cooks quickly.
