No Bake Energy Bites

Ingredients

  • 1.5 cups old-fashioned rolled oats
  • 1/4 cup ground flax
  • 1 tsp vanilla extract
  • 1/4 cup non-dairy chocolate chips
  • 3/4 cup almond butter
  • 1/4 cup honey

Instructions

  • In a large mixing bowl, combine rolled oats and ground flax.
  • Add vanilla extract, almond butter, and honey to the bowl. Mix well with a spatula until fully incorporated.
  • Fold in the chocolate chips, then use a cookie scoop to portion out the mixture. Roll each portion into a ball with your hands and place them on a baking sheet lined with parchment paper.
  • Freeze the energy bites for 10 to 15 minutes until firm, then enjoy!

Notes

  • Start by combining dry ingredients first, then mix in the wet ones.
  • Adjust the consistency by adding more almond butter or honey if needed.
  • Freeze energy bites until firm for easier handling.
