No Bake Energy Bites

Ingredients
- 1.5 cups old-fashioned rolled oats
- 1/4 cup ground flax
- 1 tsp vanilla extract
- 1/4 cup non-dairy chocolate chips
- 3/4 cup almond butter
- 1/4 cup honey
Instructions
- In a large mixing bowl, combine rolled oats and ground flax.
- Add vanilla extract, almond butter, and honey to the bowl. Mix well with a spatula until fully incorporated.
- Fold in the chocolate chips, then use a cookie scoop to portion out the mixture. Roll each portion into a ball with your hands and place them on a baking sheet lined with parchment paper.
- Freeze the energy bites for 10 to 15 minutes until firm, then enjoy!
Notes
- Start by combining dry ingredients first, then mix in the wet ones.
- Adjust the consistency by adding more almond butter or honey if needed.
