Air Fryer Chicken Breast with Vegetables

Ingredients

  • 1 pound of chicken breast cut into 1-inch pieces
  • 1/2 red onion cubed
  • 1 large zucchini chopped
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 2 tablespoons of extra virgin olive oil
  • 2 garlic cloves minced
  • 2 tablespoons of Cajun seasoning
  • Salt and black pepper to taste

Instructions

  • Preheat the air fryer to 380°F.
  • Arrange the chicken and vegetables in a single layer in the basket.
  • Drizzle olive oil on top, add garlic and seasonings, and toss to coat the chicken and vegetables completely.
  • Air fry for 23-25 minutes, flipping halfway through.
  • Serve the warm dish over rice or cauliflower rice.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
