Preheat the air fryer to 380°F.
Arrange the chicken and vegetables in a single layer in the basket.
Drizzle olive oil on top, add garlic and seasonings, and toss to coat the chicken and vegetables completely.
Air fry for 23-25 minutes, flipping halfway through.
Serve the warm dish over rice or cauliflower rice.
