Breakfast Sliders

Ingredients
For the Garlic Butter:
- 1/4 cup unsalted butter melted
- 1 tablespoon finely chopped parsley
- 1 tablespoon finely minced garlic
- 2 to 3 tablespoons grated parmesan
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt
For the Chipotle Sauce:
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- Juice of 1 lime
- 1/2 tablespoon honey
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 2 to 3 tablespoons adobo chipotle paste
For Assembly:
- 1 package Hawaiian Rolls 12 rolls
- 10 ounces beef bacon
- 2 teaspoons brown sugar
- 8 to 10 large eggs
- 2 tablespoons unsalted butter
- Salt to taste
- Black pepper to taste
- 2 avocados thinly sliced
Instructions
- Make the Garlic Butter: In a small bowl, combine the melted butter, parsley, garlic, parmesan, black pepper, oregano, and salt. Mix well and set aside.
- Prepare the Chipotle Sauce: Mix together the mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl until smooth. Set aside.
- Make the Sliders: Preheat the oven to 375°F.
- Cook the Eggs: Melt butter in a pan over medium heat. Crack the eggs into the pan and cook them low and slow, scrambling them until fluffy. Season with salt and pepper to taste. Optional: Add some cheddar cheese for extra flavor. Once cooked, remove from the pan.
- Cook the Bacon: In the same pan, fry the bacon over medium heat until golden and crispy. Sprinkle with brown sugar if desired. Once cooked, remove from the pan.
- Prepare the Rolls: Slice the Hawaiian rolls in half and place them on a baking sheet lined with parchment paper. Brush both sides with the garlic butter and bake for 10 minutes until toasted.
- Assemble the Sliders: Spread chipotle sauce on the bottom halves of the rolls. Top with avocado slices, scrambled eggs, and bacon. Place the top halves of the rolls on top.
- Slice into individual sliders and enjoy your flavorful breakfast!
