Ingredients
  

For the Garlic Butter:

  • 1/4 cup unsalted butter melted
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon finely minced garlic
  • 2 to 3 tablespoons grated parmesan
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt

For the Chipotle Sauce:

  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1/2 tablespoon honey
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 2 to 3 tablespoons adobo chipotle paste

For Assembly:

  • 1 package Hawaiian Rolls 12 rolls
  • 10 ounces beef bacon
  • 2 teaspoons brown sugar
  • 8 to 10 large eggs
  • 2 tablespoons unsalted butter
  • Salt to taste
  • Black pepper to taste
  • 2 avocados thinly sliced

Instructions
 

  • Make the Garlic Butter: In a small bowl, combine the melted butter, parsley, garlic, parmesan, black pepper, oregano, and salt. Mix well and set aside.
  • Prepare the Chipotle Sauce: Mix together the mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl until smooth. Set aside.
  • Make the Sliders: Preheat the oven to 375°F.
  • Cook the Eggs: Melt butter in a pan over medium heat. Crack the eggs into the pan and cook them low and slow, scrambling them until fluffy. Season with salt and pepper to taste. Optional: Add some cheddar cheese for extra flavor. Once cooked, remove from the pan.
  • Cook the Bacon: In the same pan, fry the bacon over medium heat until golden and crispy. Sprinkle with brown sugar if desired. Once cooked, remove from the pan.
  • Prepare the Rolls: Slice the Hawaiian rolls in half and place them on a baking sheet lined with parchment paper. Brush both sides with the garlic butter and bake for 10 minutes until toasted.
  • Assemble the Sliders: Spread chipotle sauce on the bottom halves of the rolls. Top with avocado slices, scrambled eggs, and bacon. Place the top halves of the rolls on top.
  • Slice into individual sliders and enjoy your flavorful breakfast!
