Ingredients

  • 8 ounces of spaghetti (cut in half)
  • 1 small onion (halved and thinly sliced)
  • 4 cloves of garlic (minced)
  • 4 1/2 cups of chicken or vegetable broth
  • 2 cups of broccoli florets
  • 2 cups of sliced white button mushrooms
  • 2 teaspoons of sea salt (adjust to taste)
  • 2 teaspoons of crushed red pepper (adjust to taste)
  • 2 teaspoons of dried Italian herbs
  • 1 teaspoon of freshly ground black pepper (adjust to taste)
  • 1/2 cup of heavy cream
  • 1 cup of grated parmesan cheese


Instructions

  1. In a large dutch oven, combine uncooked pasta, onion, mushrooms, broccoli, broth, garlic, crushed red pepper, dried herbs, salt, and pepper.
  2. Stir everything together, bring to a boil, cover, and cook on medium heat for 12-15 minutes. Remember to stir halfway through cooking!
  3. Remove the lid and stir in the grated Parmesan cheese and heavy cream.
