One Pot Pasta Primavera

Ingredients
  

  • 8 ounces of spaghetti cut in half
  • 1 small onion halved and thinly sliced
  • 4 cloves of garlic minced
  • 4 1/2 cups of chicken or vegetable broth
  • 2 cups of broccoli florets
  • 2 cups of sliced white button mushrooms
  • 2 teaspoons of sea salt adjust to taste
  • 2 teaspoons of crushed red pepper adjust to taste
  • 2 teaspoons of dried Italian herbs
  • 1 teaspoon of freshly ground black pepper adjust to taste
  • 1/2 cup of heavy cream
  • 1 cup of grated parmesan cheese

Instructions
 

  • In a large dutch oven, combine uncooked pasta, onion, mushrooms, broccoli, broth, garlic, crushed red pepper, dried herbs, salt, and pepper.
  • Stir everything together, bring to a boil, cover, and cook on medium heat for 12-15 minutes. Remember to stir halfway through cooking!
  • Remove the lid and stir in the grated Parmesan cheese and heavy cream.
