The Ultimate GF Flourless Chocolate Cake

Ingredients
- 1 cup dark chocolate chips
- 6 tablespoons unsalted butter or vegan butter, or 6 tablespoons melted coconut oil
- 4 eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon kosher salt
- 3/4 cup sugar or coconut sugar, or monk fruit sweetener for a sugar-free option
- 1/4 cup cacao powder
Serving Suggestions:
- Vanilla ice cream
- Shaved chocolate
Instructions
- Preheat your oven to 375 degrees F. In a medium bowl, melt the chocolate chips and butter. You can do this in the microwave, heating in 2-3 intervals of 30 seconds each. If you don’t have a microwave, you can use the double boiler method on the stove.
- In a large bowl, whisk together the eggs, vanilla, salt, sugar, and cacao powder until smooth. It might be thick at first, but keep whisking until smooth.
- Pour the melted chocolate mixture into the bowl with the egg mixture, and stir until everything is well combined.
- Grease 4, 4-inch ramekins with oil spray or melted butter. Divide the chocolate batter evenly among the ramekins.
- Bake for 25-27 minutes, or until the middle is set. Once done, remove from the oven and let them cool for a bit.
- Serve each cake with a scoop of ice cream on top, sprinkle with shaved chocolate, and ENJOY!
