Oh my goodness, this dessert is absolutely EPICCCCC!!! Seriously, you need to try it. You can make it as one big cake using a springform pan, or you can do what I did and make smaller cakes using 4-inch ramekins. Personally, I think smaller is more fun—you can either share or keep one all to yourself, it’s totally up to you! And when you top it with vanilla ice cream and shaved chocolate, get ready for a taste sensation like no other. Who needs fancy restaurants this Valentine’s Day when you can whip up this delight at home? 🙂

The Ultimate GF Flourless Chocolate Cake

Ingredients
  

  • 1 cup dark chocolate chips
  • 6 tablespoons unsalted butter or vegan butter, or 6 tablespoons melted coconut oil
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt
  • 3/4 cup sugar or coconut sugar, or monk fruit sweetener for a sugar-free option
  • 1/4 cup cacao powder

Serving Suggestions:

  • Vanilla ice cream
  • Shaved chocolate

Instructions
 

  • Preheat your oven to 375 degrees F. In a medium bowl, melt the chocolate chips and butter. You can do this in the microwave, heating in 2-3 intervals of 30 seconds each. If you don’t have a microwave, you can use the double boiler method on the stove.
  • In a large bowl, whisk together the eggs, vanilla, salt, sugar, and cacao powder until smooth. It might be thick at first, but keep whisking until smooth.
  • Pour the melted chocolate mixture into the bowl with the egg mixture, and stir until everything is well combined.
  • Grease 4, 4-inch ramekins with oil spray or melted butter. Divide the chocolate batter evenly among the ramekins.
  • Bake for 25-27 minutes, or until the middle is set. Once done, remove from the oven and let them cool for a bit.
  • Serve each cake with a scoop of ice cream on top, sprinkle with shaved chocolate, and ENJOY!
