Stuffed Mini Peppers

These stuffed mini peppers make a tasty low-carb treat. They’re filled with a simple avocado mash and topped with everything but the bagel seasoning for extra flavor!

Stuffed Mini Peppers

  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • Everything but the Bagel seasoning for sprinkling
  • 16 mini peppers


  • In a bowl, mash the avocados until smooth.
  • Stir in the lime juice, garlic powder, and sea salt, mixing well with the mashed avocados.
  • Slice the mini peppers lengthwise and remove the seeds to create a boat-like shape.
  • Fill each pepper boat with the avocado mash.
  • Sprinkle the Everything but the Bagel seasoning generously over the stuffed peppers for that extra zing!
