Peanut Butter And Jelly Rolls

Ingredients
For the Rolls:
- 1 cup warm oat milk or any other milk
- 2 1/4 tsp yeast 1 package
- 1 tbsp coconut sugar or brown sugar
- 1/2 tsp salt
- 2 tsp vanilla extract
- 1/2 cup plant-based butter or regular
- 3 eggs
- 4 cups all-purpose flour
For the Peanut Butter And Jelly Filling:
- 1/2 cup creamy peanut butter
- 1/4 cup strawberry preserves
For the Peanut Butter Frosting:
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar
- 3 tbsp oat milk
- 1 tsp vanilla extract
Instructions
- In an electric mixer, combine warm oat milk, coconut sugar, and yeast. Let it sit until bubbles form on the top.
- Add salt, vanilla extract, butter, eggs, and flour. Mix until the dough is no longer sticky.
- Allow the dough to rise for 1 hour until doubled in size.
- Roll out the dough on a floured surface and spread peanut butter and strawberry preserves.
- Roll the dough tightly into a log and cut into individual pieces. Place in a buttered dish and let rise for 30 minutes.
- Preheat the oven to 350F and bake for 25 minutes.
- While the rolls bake, prepare the peanut butter frosting by whisking together peanut butter, powdered sugar, oat milk, and vanilla extract until fluffy.
- Once out of the oven, spread the frosting on the rolls and enjoy warm with more jelly!
Notes
- Be mindful not to overwork the dough to avoid toughness.
- For make-ahead preparation, assemble the rolls, refrigerate overnight, and bake the next day.
