In an electric mixer, combine warm oat milk, coconut sugar, and yeast. Let it sit until bubbles form on the top.
Add salt, vanilla extract, butter, eggs, and flour. Mix until the dough is no longer sticky.
Allow the dough to rise for 1 hour until doubled in size.
Roll out the dough on a floured surface and spread peanut butter and strawberry preserves.
Roll the dough tightly into a log and cut into individual pieces. Place in a buttered dish and let rise for 30 minutes.
Preheat the oven to 350F and bake for 25 minutes.
While the rolls bake, prepare the peanut butter frosting by whisking together peanut butter, powdered sugar, oat milk, and vanilla extract until fluffy.
Once out of the oven, spread the frosting on the rolls and enjoy warm with more jelly!
