Peach and Blueberry Baked Oatmeal

Ingredients
- 2 cups of old-fashioned rolled oats
- 2 cups of unsweetened almond milk
- 1 cup of fresh blueberries
- 1 large fresh peach
- 1 medium egg
- 1/4 cup of maple syrup adjust to your taste
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon
- 1/2 teaspoon of kosher salt
- 1 teaspoon of vanilla extract
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Dice a large peach and rinse the blueberries. Combine all the dry ingredients in a 13×9 oven-safe baking dish (*check the note for other options*).
- Crack the egg into the baking dish, then add the milk, maple syrup, and vanilla extract.
- Stir everything together with a fork.
- Finally, gently fold in the peach slices and blueberries.
- Bake in the oven for 20-25 minutes.
- Serve it up warm!
Notes
For thinner slices, use a 13×9 baking dish. For thicker pieces, opt for an 11×7 baking pan.
