Peach and Blueberry Baked Oatmeal

Throw all the ingredients into a baking dish and stick it in the oven – it’s as simple as that! Feel free to switch up the fruit combo, but we really enjoy the delightful mix of fresh peaches and blueberries. This recipe couldn’t be more straightforward!

Peach and Blueberry Baked Oatmeal

Ingredients
  

  • 2 cups of old-fashioned rolled oats
  • 2 cups of unsweetened almond milk
  • 1 cup of fresh blueberries
  • 1 large fresh peach
  • 1 medium egg
  • 1/4 cup of maple syrup adjust to your taste
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of kosher salt
  • 1 teaspoon of vanilla extract

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Dice a large peach and rinse the blueberries. Combine all the dry ingredients in a 13×9 oven-safe baking dish (*check the note for other options*).
  • Crack the egg into the baking dish, then add the milk, maple syrup, and vanilla extract.
  • Stir everything together with a fork.
  • Finally, gently fold in the peach slices and blueberries.
  • Bake in the oven for 20-25 minutes.
  • Serve it up warm!

Notes

For thinner slices, use a 13×9 baking dish. For thicker pieces, opt for an 11×7 baking pan.
