Peach and Blueberry Baked Oatmeal

Ingredients

of old-fashioned rolled oats

of unsweetened almond milk

of fresh blueberries

large fresh peach
1
medium egg

of maple syrup
adjust to your taste

of baking powder

teaspoon
of cinnamon

teaspoon
of kosher salt

teaspoon
of vanilla extract
Instructions
Preheat the oven to 350 degrees Fahrenheit.
Dice a large peach and rinse the blueberries. Combine all the dry ingredients in a 13×9 oven-safe baking dish (*check the note for other options*).
Crack the egg into the baking dish, then add the milk, maple syrup, and vanilla extract.
Stir everything together with a fork.
Finally, gently fold in the peach slices and blueberries.
Bake in the oven for 20-25 minutes.
Serve it up warm!
Notes
For thinner slices, use a 13×9 baking dish. For thicker pieces, opt for an 11×7 baking pan.
