Maple Glazed Apple Blondies

Ingredients
For the Blondie Bars:
- 1/2 cup oat flour
- 1/2 cup old-fashioned rolled oats
- 1/2 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup runny almond butter
- 1/4 cup pure maple syrup
- 1/2 cup coconut sugar or substitute cane sugar, brown sugar, or monk fruit sweetener
- 2 eggs
- 2 tsp vanilla extract
For the Apple Filling:
- 1 large green apple peeled and finely chopped (about 1.5-2 cups)
- 2 tbsp pure maple syrup
- 1/2 tsp cinnamon
For the Maple Glaze:
- 1.5 cups powdered sugar
- 1 tbsp milk almond, cashew, coconut, or cow
- 1 tbsp pure maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper, coating it with non-stick spray.
- Peel and dice the green apple, then sauté it with cinnamon and maple syrup until soft and tender.
- In a mixing bowl, combine almond butter, maple syrup, coconut sugar, eggs, and vanilla extract until smooth.
- Add oats, oat flour, baking powder, cinnamon, and salt, mixing until well combined.
- Gently fold in the sautéed apples, then pour the batter into the prepared baking dish and spread it evenly.
- Bake for 30-35 minutes, then let the blondies cool completely before adding the glaze.
- For the glaze, whisk together powdered sugar, milk, maple syrup, and vanilla extract until smooth. Drizzle over the cooled blondies and let it set for 10 minutes.
- Slice into bars and indulge in the deliciousness!
