For the Blondie Bars:

  • 1/2 cup oat flour
  • 1/2 cup old-fashioned rolled oats
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup runny almond butter
  • 1/4 cup pure maple syrup
  • 1/2 cup coconut sugar (or substitute cane sugar, brown sugar, or monk fruit sweetener)
  • 2 eggs
  • 2 tsp vanilla extract

For the Apple Filling:

  • 1 large green apple (peeled and finely chopped (about 1.52 cups))
  • 2 tbsp pure maple syrup
  • 1/2 tsp cinnamon

For the Maple Glaze:

  • 1.5 cups powdered sugar
  • 1 tbsp milk (almond, cashew, coconut, or cow)
  • 1 tbsp pure maple syrup
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper, coating it with non-stick spray.
  2. Peel and dice the green apple, then sauté it with cinnamon and maple syrup until soft and tender.
  3. In a mixing bowl, combine almond butter, maple syrup, coconut sugar, eggs, and vanilla extract until smooth.
  4. Add oats, oat flour, baking powder, cinnamon, and salt, mixing until well combined.
  5. Gently fold in the sautéed apples, then pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 30-35 minutes, then let the blondies cool completely before adding the glaze.
  7. For the glaze, whisk together powdered sugar, milk, maple syrup, and vanilla extract until smooth. Drizzle over the cooled blondies and let it set for 10 minutes.
  8. Slice into bars and indulge in the deliciousness!

Notes

  • Choose almond butter with only almonds as the ingredient.
  • Create oat flour by blending oats until smooth.
  • Allow bars to cool before glazing to prevent melting.
  • Use a clean knife for neat slices.
