Maple Glazed Apple Blondies

Ingredients

For the Blondie Bars:

  • 1/2 cup oat flour
  • 1/2 cup old-fashioned rolled oats
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup runny almond butter
  • 1/4 cup pure maple syrup
  • 1/2 cup coconut sugar or substitute cane sugar, brown sugar, or monk fruit sweetener
  • 2 eggs
  • 2 tsp vanilla extract

For the Apple Filling:

  • 1 large green apple peeled and finely chopped (about 1.5-2 cups)
  • 2 tbsp pure maple syrup
  • 1/2 tsp cinnamon

For the Maple Glaze:

  • 1.5 cups powdered sugar
  • 1 tbsp milk almond, cashew, coconut, or cow
  • 1 tbsp pure maple syrup
  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 350°F and line an 8x8 baking dish with parchment paper, coating it with non-stick spray.
  • Peel and dice the green apple, then sauté it with cinnamon and maple syrup until soft and tender.
  • In a mixing bowl, combine almond butter, maple syrup, coconut sugar, eggs, and vanilla extract until smooth.
  • Add oats, oat flour, baking powder, cinnamon, and salt, mixing until well combined.
  • Gently fold in the sautéed apples, then pour the batter into the prepared baking dish and spread it evenly.
  • Bake for 30-35 minutes, then let the blondies cool completely before adding the glaze.
  • For the glaze, whisk together powdered sugar, milk, maple syrup, and vanilla extract until smooth. Drizzle over the cooled blondies and let it set for 10 minutes.
  • Slice into bars and indulge in the deliciousness!

Notes

  • Choose almond butter with only almonds as the ingredient.
  • Create oat flour by blending oats until smooth.
  • Allow bars to cool before glazing to prevent melting.
  • Use a clean knife for neat slices.
