Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a large mixing bowl, combine all the dry ingredients.
Add in the wet ingredients and mix until you get a batter.
Gently fold in the blueberries.
Use a cookie scoop to form 18-20 bites on the baking sheet.
Flatten each bite with the back of a spoon or spatula.
Bake for 10-11 minutes, then let them cool completely.
While they cool, mix the lemon juice and powdered sugar for the icing.
Drizzle the icing over the cooled bites.
Serve and enjoy! Store any leftovers in the fridge for up to a week or freeze them for up to two months.
