Lemon-Blueberry Protein Breakfast Bites
Ingredients
- 2 cups Rolled Oats
- 1 1/4 cups Oat Flour
- 1 teaspoon Cinnamon
- 3/4 teaspoon Baking Soda
- 1/2 teaspoon Sea Salt
- 1/4 cup Ground Flax Seeds
- 1 scoop Collagen Peptides or vanilla-flavored plant-based protein for a vegan option
- 2/3 cup Apple Sauce
- 1/3 cup Maple Syrup
- 1 Ripe Banana mashed
- 1/3 cup Coconut Oil melted
- Juice and zest of 1 Lemon
- 2 cups Blueberries
For the Icing (optional):
- 1 tablespoon Lemon Juice
- 1/4 cup Powdered Sugar
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine all the dry ingredients.
- Add in the wet ingredients and mix until you get a batter.
