Ingredients

For the Butterbeer Cake:

  • 3 cups butterscotch beer 710 ml (cream soda will work too)
  • 1 ¾ cups all-purpose flour spooned and leveled (219 g)
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter softened (112 g)
  • ½ cup light brown sugar packed (110 g)
  • ¼ cup granulated white sugar 50 g
  • 2 eggs at room temperature
  • 2 teaspoons vanilla bean paste or extract
  • 1 teaspoon butter extract
  • cup butterscotch chips melted and slightly cooled (66 g)
  • ½ cup buttermilk at room temperature (120 ml)

For the Butterbeer Buttercream Frosting:

  • 1 cup unsalted butter softened (224 g)
  • Pinch of salt
  • cup butterscotch chips melted and slightly cooled (133 g)
  • 1 ½ cups powdered sugar 195 g
  • ½ teaspoon vanilla bean paste or extract
  • ½ teaspoon butter extract
  • Gold and white nonpareil sprinkles optional

For the Butterscotch Sauce:

  • ¼ cup butterscotch chips 50 g
  • 1 ½ tablespoons heavy cream 22 ml
  • ½ tablespoon honey

Instructions

For the Butterbeer Cake:

  • Simmer the butterscotch beer in a large pot over medium heat until it reduces to ½ cup (120 ml), about 20-30 minutes. Let it cool slightly.
  • Preheat the oven to 350°F and prepare a 9×9 inch baking pan.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cream butter and sugars until fluffy, then add eggs, vanilla, butter extract, melted butterscotch chips, and butterscotch beer reduction.
  • Mix in buttermilk and dry ingredients until smooth. Pour batter into the pan and bake for 27-31 minutes.
  • Let the cake cool completely.

For the Butterbeer Buttercream Frosting:

  • Whip butter and salt until pale and fluffy. Add melted butterscotch chips and mix.
  • Sift in powdered sugar and mix until fluffy. Add vanilla and butter extract.

For the Butterscotch Sauce:

  • Microwave butterscotch chips and heavy cream until melted, then mix in honey.

Decorating the Cake:

  • Transfer the cooled cake to a serving plate and frost with butterbeer frosting.
  • Drizzle butterscotch sauce on top and gently swirl it in with a spoon.
