- ½ cup light brown sugar (packed (110 g))
- ¼ cup granulated white sugar (50 g)
- 2 eggs (at room temperature)
- 2 teaspoons vanilla bean paste or extract
- 1 teaspoon butter extract
- â…“ cup butterscotch chips (melted and slightly cooled (66 g))
- ½ cup buttermilk (at room temperature (120 ml))
For the Butterbeer Buttercream Frosting:
- 1 cup unsalted butter (softened (224 g))
- Pinch of salt

For the Butterbeer Cake:
- Simmer the butterscotch beer in a large pot over medium heat until it reduces to ½ cup (120 ml), about 20-30 minutes. Let it cool slightly.
- Preheat the oven to 350°F and prepare a 9×9 inch baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugars until fluffy, then add eggs, vanilla, butter extract, melted butterscotch chips, and butterscotch beer reduction.
- Mix in buttermilk and dry ingredients until smooth. Pour batter into the pan and bake for 27-31 minutes.
- Let the cake cool completely.
For the Butterbeer Buttercream Frosting:
- Whip butter and salt until pale and fluffy. Add melted butterscotch chips and mix.
