**DOUGH**

  • 1 3/4 cups oat flour
  • 1/2 cup almond flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup coconut sugar
  • 2 tbsp melted coconut oil or vegan butter
  • 1/2 cup vegan yogurt

**FIG FILLING**

  • 1 cup dried black mission figs
  • 1 tsp orange zest
  • 1/4 cup coconut sugar
  • Pinch of salt
  • 4 tsp water


Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper or a silicon baking mat.
  2. To make the filling, blend dried figs, orange zest, coconut sugar, and salt in a food processor until figs are broken down. Add water and blend until smooth.
  3. For the dough, mix oat flour, almond flour, cinnamon, baking powder, salt, and coconut sugar in a large bowl. Add yogurt and oil, and mix until a dough forms.
  4. Roll out the dough on parchment paper until 1/4″ thick. Spread fig filling evenly over the dough.
  5. Fold both sides inward to create a log, then flip it so the seam side is down. Cut the log in half lengthwise and mend the edges.
  6. Slice into bite-sized pieces, arrange on the baking sheet, and bake for 20 minutes.
  7. Let cool before serving.

Notes

  • Stick to dried figs for the filling; fresh figs will make the bars soggy.
  • Don’t hesitate to use your fingers to work the dough. If it cracks or breaks, simply mend it back together.
