Freezer Breakfast Sandwiches

Are you always rushing in the morning and never have time for breakfast? Try making these freezer breakfast sandwiches that taste just like a sausage and egg McMuffin, but even better because they’re homemade!

There are plenty of ways to customize this recipe to your liking! Let’s start with the eggs. If you want them to be perfectly round like McDonald’s, you can use molds. But if you don’t have them or don’t want to buy them, you can make scrambled eggs, fry them regularly and fold the edges, or bake them in the oven and cut them into squares.

Now, let’s talk about the protein. This recipe uses a mix of ground turkey and ground beef to make breakfast sausage, but you can use only turkey or beef if you prefer. You can also skip the sausage and go for turkey or beef bacon, or keep it vegetarian with just egg and cheese.

For the bread, English muffins work best because they freeze and reheat well without losing their texture. But if you’re not freezing them, you can use bagels, brioche buns, or sandwich bread instead!

Ingredients
  

  • 1/2 pound ground beef 85/15
  • 1/2 pound ground turkey
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 5 large eggs
  • Salt and black pepper to taste
  • Oil spray
  • 5 slices of cheddar or American cheese
  • 5 English muffins buttered and toasted

Instructions
 

  • In a bowl, mix together the ground beef, ground turkey, brown sugar, salt, thyme, sage, paprika, garlic powder, onion powder, and black pepper. Divide the mixture into 5 to 6 equal portions and shape them into thin patties.
  • Heat a frying pan over medium heat and add the olive oil and butter. Cook the sausage patties for 3 to 4 minutes on each side until fully cooked. Remove from the pan and set aside.
  • Preheat the oven to 350°F and line a tray with parchment paper. Toast the English muffins in the oven for 6 to 8 minutes until golden.
  • Meanwhile, cook the eggs in greased molds over medium heat until the whites are set. Remove the molds and set the eggs aside.
  • To assemble the sandwiches, place a slice of cheese on the bottom half of each English muffin, followed by a sausage patty, an egg, and the top half of the muffin.
  • Wrap each sandwich in sandwich paper and store them in a ziplock bag or container in the freezer.
  • To enjoy, microwave the sandwiches for 90 seconds until warmed through. Then, enjoy your delicious homemade breakfast sandwich!

Notes

If you don’t have egg molds, you can make scrambled eggs or a sheet pan egg bake and cut them into squares instead.
