Looking for a delightful morning treat that’s as fun to make as it is tasty? Look no further than Eggs in a Boat! These little breakfast wonders combine crispy baguette, fluffy eggs, savory bacon, and gooey cheese for a brunch that’s simply irresistible.

Ingredients
  

  • 2 mini baguettes
  • 6 eggs
  • beef bacon
  • shredded mozzarella cheese
  • chopped basil
  • chopped parsley
  • grated parmesan cheese
  • red pepper flakes
  • salt
  • black pepper

For the garlic butter, you’ll need:

  • 1/2 cup unsalted butter melted
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon finely minced garlic
  • 3 tablespoons grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions
 

  • Preheat your oven to 400°F.
  • In a small bowl, mix together the melted butter, parsley, garlic, parmesan cheese, salt, black pepper, and oregano.
  • Cut three sections out of each baguette to create three wells.
  • Brush the garlic butter inside and outside each baguette.
  • Layer beef bacon and mozzarella cheese in each well, then crack an egg on top of each.
  • Bake for 12 to 15 minutes until the egg whites are set.
  • Finish off with salt, black pepper, chopped basil, parsley, more parmesan, and a sprinkle of red pepper flakes.

Notes

  • Don’t pre-cook the bacon; it’ll cook perfectly in the oven.
  • Larger eggs may need a few extra minutes to fully cook.
  • Adjust the cooking time based on your preference for the yolk consistency.
