Cucumber and Tomato Salad with Whipped Feta

Our grandma loved mixing yummy things like mashed feta, tomatoes, cucumbers, and dried mint. Guess what? We turned this tasty combo into something awesome – a whipped feta board! You can eat it with warm pita bread, pita chips, or your favorite crusty bread.

Cucumber and Tomato Salad with Whipped Feta

Ingredients
  

FOR THE CUCUMBER AND TOMATO SALAD

  • 1 cup sliced baby tomatoes
  • 6 baby cucumbers or 1 English cucumber chopped
  • Juice of 1/4 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried mint
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

FOR THE WHIPPED FETA

  • 8 oz block of feta
  • 1/4 cup Greek yogurt or plain yogurt
  • Zest of a lemon
  • Squeeze of half a lemon

Instructions
 

  • Take a big bowl and put in the sliced tomatoes and cucumbers.
  • In another smaller bowl, mix the lemon juice, olive oil, vinegar, dried mint, salt, and pepper. Pour this yummy mix over the veggies and give it a good toss.
  • Now, let’s move to the whipped feta part:
  • Use a food processor and toss in the feta, yogurt, lemon zest, and lemon juice. Blend it until it’s super smooth and fluffy.
  • Time to assemble! Spread the whipped feta on a serving board or put it in a big bowl. Sprinkle the cucumber and tomato salad on top.
  • Pop it in the fridge for about 20 minutes to chill. And there you go – enjoy your delicious whipped feta board! 🎉”
