Copycat Trader Joe’s Pumpkin Granola Bark

Ingredients
- 3 cups rolled oats
- 1/4 cup chia seeds
- 1/4 cup ground flax seeds
- 1/4 cup brown sugar or coconut sugar
- 1/4 cup pumpkin puree
- 2 tablespoons pumpkin pie spice
- 1/3 cup maple syrup
- 1/2 cup melted coconut oil
For the Topping:
- 1 9- ounce bag chocolate chips
- 1 tablespoon coconut oil
- 1/2 cup pumpkin seeds
Instructions
- Let’s dive in! Preheat your oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl, mix together all the granola ingredients until well combined. Spread the mixture evenly onto the prepared baking sheet and bake for 24 minutes, rotating the tray halfway through.
- Once baked, allow the granola to cool completely. While it cools, melt the chocolate chips and coconut oil together.
- Pour the melted chocolate over the cooled granola and spread it out evenly. Sprinkle pumpkin seeds on top and place the tray in the freezer for 20 minutes to set.
- Once the chocolate has hardened, break the granola into pieces and enjoy! Store any leftovers in an airtight container in the fridge or freezer for later munching. Happy snacking! 🎃
