Imagine cozying up on a crisp fall day with a steaming latte and a delightful pumpkin snack. It’s the epitome of autumn bliss! And when it comes to pumpkin treats, Trader Joe’s always knows how to deliver. But what if I told you that you could recreate their famous Pumpkin Granola Bark right in your own kitchen, using healthier ingredients? Yes, you heard that right! My Copycat Trader Joe’s Pumpkin Granola Bark is a delicious twist on their fall favorite, made with wholesome rolled oats, a mix of seeds, and a velvety dairy-free chocolate coating. It’s the perfect treat for those chilly fall afternoons!

Trader Joe’s is renowned for its pumpkin offerings, and their pumpkin granola bark is no exception. Packed with hearty oats, seeds, pumpkin puree, and topped with a decadent chocolate layer, it’s a seasonal delight. But let’s face it, like many TJ’s goodies, it’s not the healthiest option out there. Plus, those tiny bags can quickly add up in cost, especially if you, like me, have a serious snacking habit!

That’s why I decided to whip up my own version of this tasty treat, with a healthier twist. This homemade granola bark is made with natural ingredients, has less sugar, and is gluten-free. Plus, you can make a big batch for a fraction of the cost of store-bought, with enough leftovers to keep the snack train rolling!

I love enjoying this granola bark as a quick snack or pairing it with my Apple Crisp Cold Brew Latte for a festive breakfast. It’s perfect for those busy mornings when you need a taste of fall on the go!

Servings 6

  • 3 cups rolled oats
  • 1/4 cup chia seeds
  • 1/4 cup ground flax seeds
  • 1/4 cup brown sugar or coconut sugar
  • 1/4 cup pumpkin puree
  • 2 tablespoons pumpkin pie spice
  • 1/3 cup maple syrup

For the Topping:

  • 1 9- ounce bag chocolate chips

  • 1/2 cup pumpkin seeds

  • Let’s dive in! Preheat your oven to 325°F and line a baking sheet with parchment paper.
  • In a large bowl, mix together all the granola ingredients until well combined. Spread the mixture evenly onto the prepared baking sheet and bake for 24 minutes, rotating the tray halfway through.
  • Once baked, allow the granola to cool completely. While it cools, melt the chocolate chips and coconut oil together.
  • Pour the melted chocolate over the cooled granola and spread it out evenly. Sprinkle pumpkin seeds on top and place the tray in the freezer for 20 minutes to set.
  • Once the chocolate has hardened, break the granola into pieces and enjoy! Store any leftovers in an airtight container in the fridge or freezer for later munching. Happy snacking! 🎃
