Ingredients
  

  • 3 cups rolled oats
  • 1/4 cup chia seeds
  • 1/4 cup ground flax seeds
  • 1/4 cup brown sugar or coconut sugar
  • 1/4 cup pumpkin puree
  • 2 tablespoons pumpkin pie spice
  • 1/3 cup maple syrup
  • 1/2 cup melted coconut oil

For the Topping:

  • 1 9- ounce bag chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup pumpkin seeds

Instructions
 

  • Let’s dive in! Preheat your oven to 325°F and line a baking sheet with parchment paper.
  • In a large bowl, mix together all the granola ingredients until well combined. Spread the mixture evenly onto the prepared baking sheet and bake for 24 minutes, rotating the tray halfway through.
  • Once baked, allow the granola to cool completely. While it cools, melt the chocolate chips and coconut oil together.
  • Pour the melted chocolate over the cooled granola and spread it out evenly. Sprinkle pumpkin seeds on top and place the tray in the freezer for 20 minutes to set.
  • Once the chocolate has hardened, break the granola into pieces and enjoy! Store any leftovers in an airtight container in the fridge or freezer for later munching. Happy snacking! 🎃
