Hey, folks! Can you believe Halloween is almost here? Time has flown by, and before we know it, my boys’ favorite holiday will be here in a flash. While Halloween isn’t my top holiday (I’m more of a Christmas person!), I love making it special for my boys by prepping costumes and whipping up delicious and nutritious treats.
Now, I’m all about living a healthy lifestyle, but I also believe in balance. That means letting my kids indulge in traditional Halloween candy. After all, kids will be kids, right? They deserve to enjoy the same candies we loved as kids!
But, I also like to balance things out by offering healthier options, especially leading up to Halloween. So, when my friend Melissa shared this recipe on her blog, I knew I had to give it a try! These adorable chocolate pumpkins are made with just four ingredients and are a healthier spin on Reese’s Peanut Butter Pumpkins. And guess what? You can enjoy these beyond Halloween by using mini muffin liners to create bite-sized peanut butter cups!
Here’s what you’ll need:
Healthy Reese’s Peanut Butter Pumpkins
Equipment
- 1 Pumpkin Chocolate Mold (perfect for crafting your mini pumpkins)
Ingredients
- 1 1/2 cups of Chocolate Chips
- 1 tablespoon of Coconut Oil
- 1 1/4 cups of Powdered Peanut Butter or Creamy Peanut Butter
- 1/4 cup of Water
Instructions
- Start by melting the chocolate chips and coconut oil together in a small bowl. Microwave them in 2-3 increments of 30 seconds each, stirring between intervals until fully melted.
- Pour the melted chocolate into the pumpkin molds, filling them about 1/4 of the way. There will be chocolate leftover, which is what you want!
- Place the molds in the freezer for 10 minutes to set the chocolate.
- While the chocolate sets, mix the powdered peanut butter with water to create a creamy peanut butter.
- Once the chocolate is set, fill the molds the remaining 3/4 of the way with the peanut butter mixture.
- Top off the molds with the remaining melted chocolate, filling them to the top.
- Pop the molds back in the freezer for at least an hour until the chocolate sets.
- Once ready, remove the pumpkins from the molds, and voila! Your Healthy Reese’s Peanut Butter Pumpkins are ready to enjoy. Keep any leftovers in the fridge for up to a week in an airtight container.
