These strawberry matcha overnight oats are perfect for prepping in advance and keeping in the fridge for a quick grab-and-go breakfast. They taste just like your favorite boba drink, giving you the perfect excuse to enjoy a sweet treat for breakfast!

Strawberry Matcha Overnight Oats

**Macerated Strawberries:**

  • 1 cup diced strawberries
  • 1/3 cup granulated white sugar

**Matcha Oats:**

  • 1 cup rolled oats
  • 1 1/3 cup milk of your choice (use 1 1/4 cup for a thicker consistency)
  • 2 teaspoons matcha powder
  • 2 teaspoons vanilla paste or vanilla extract
  • 1/4 cup maple syrup

**Other:**

  • Vanilla yogurt (optional)
  1. In a bowl, mix the diced strawberries with the white sugar. Let it sit for 30 minutes.
  2. In another bowl, combine oats, milk, matcha, vanilla, and maple syrup. Mix well.
  3. In jars, layer strawberries at the bottom, followed by vanilla yogurt (if using), and then the vanilla matcha oats on top.
  4. Place in the fridge to soak overnight or for at least 3 to 4 hours if you’re in a hurry. Enjoy the next morning!

You can either layer everything and refrigerate or just refrigerate the oats layer and layer the next morning. Both ways work great!
