Ingredients

Scale
  • 1 loaf of brioche bread (sliced)
  • 4 eggs
  • 1/4 cup of sugar
  • 1 cup of whole milk
  • 1/4 cup of ricotta cheese
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of kosher salt
  • 1 cup of mini chocolate chips

**Cannoli Filling:**

  • 8 ounces of mascarpone cheese
  • 1 1/2 cups of whole milk ricotta cheese
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract

Instructions

  1. In a big mixing bowl, whisk together milk, eggs, ricotta, sugar, salt, and vanilla.
  2. In another bowl, combine all the ingredients for the cannoli filling until smooth and creamy.
  3. Take a slice of bread, spread 2 tablespoons of the cannoli mixture, and top it with another slice of brioche. Cut it into four pieces and arrange them facing up in a buttered baking dish. Repeat until all the bread is used.
  4. Pour the custard over the bread, cover, and refrigerate overnight. This allows the custard to soak into the bread thoroughly.
  5. Preheat the oven to 350 degrees F.
  6. Remove the cover from the baking dish, sprinkle the top with mini chocolate chips, and bake for 30-35 minutes or until it turns a beautiful golden brown.
  7. Dust it with powdered sugar, and you’re ready to savor this heavenly French toast bake!
