Crust:

  • 1½ cups biscuits (like graham crackers)
  • ¾ cup oats
  • 4 tbsp vegan butter (melted)

Filling:

  • 1½ cups vegan condensed milk
  • ½ cup coconut cream
  • ½ cup cornstarch
  • ½ cup fresh or store-bought lime juice
  • 1 tbsp key lime zest
  • 1 tsp matcha (optional, for color)

Topping:

  • Whipped dairy-free cream

Prepare the Crust:

  1. Crush the biscuits and oats into fine crumbs using a food processor.
  2. Mix in the melted butter until the mixture resembles wet sand.
  3. Press the mixture firmly into a greased pie dish.
  4. Bake at 340°F (170°C) for 8-10 minutes until lightly golden.

Make the Filling:

  1. In a bowl, mix together the condensed milk, coconut cream, cornstarch, lime juice, lime zest, and matcha (if using) until smooth.
  2. Pour the mixture over the baked crust.

Bake the Pie:

  1. Bake the pie at 340°F (170°C) for 15 minutes or until the filling is just set.
  2. Remove from the oven and let it cool completely.

Chill and Serve:

  1. Refrigerate the pie until fully chilled.
  2. Serve with a dollop of whipped dairy-free cream and enjoy!
