Vegan Key lime Pie
A buttery, crumbly crust paired with a creamy, tangy filling 😍. This easy-to-make pie only requires a handful of ingredients! This pie is creamy, zesty, and perfect for any occasion!
Crust:
- 1½ cups biscuits like graham crackers
- ¾ cup oats
- 4 tbsp vegan butter melted
Filling:
- 1½ cups vegan condensed milk
- ½ cup coconut cream
- ½ cup cornstarch
- ½ cup fresh or store-bought lime juice
- 1 tbsp key lime zest
- 1 tsp matcha optional, for color
Prepare the Crust:
Crush the biscuits and oats into fine crumbs using a food processor.
Mix in the melted butter until the mixture resembles wet sand.
Press the mixture firmly into a greased pie dish.
Bake at 340°F (170°C) for 8-10 minutes until lightly golden.
Make the Filling:
In a bowl, mix together the condensed milk, coconut cream, cornstarch, lime juice, lime zest, and matcha (if using) until smooth.
Pour the mixture over the baked crust.
