Triple Berry Breakfast Bread

Ingredients
Dry Ingredients
- 1.5 cups white whole wheat flour
- 1/2 cup rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 cup mixed berries fresh or frozen
Wet Ingredients
- 1/2 cup unsweetened applesauce or mashed banana for a sweeter cake
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1/2 cup plain unsweetened almond milk
- 1/3 cup maple syrup or honey
Toppings
- Maple syrup/honey
- Nut butter
Instructions
- Preheat your oven to 350ºF and grease an 8×8-inch square baking dish with nonstick cooking spray.
- In a large bowl, combine all dry ingredients except for the berries and whisk them together. Then, add the wet ingredients into the dry mixture and stir well with a wooden spoon. Finally, gently fold in the berries until evenly distributed.
- Transfer the batter into the prepared baking dish and sprinkle additional berries and oats on top, if desired.
- Bake at 350ºF for approximately 40 minutes or until the center is fully cooked.
- Allow the breakfast cake to cool for at least 15 minutes before slicing and serving.
