Single Serving Olive Oil Baked Peach

Ingredients

  • 1 Peach halved and pit removed
  • 2 Teaspoons Olive Oil plus extra for drizzling
  • 1/2 Teaspoon Vanilla Extract
  • 1 Teaspoon Coconut Sugar
  • A Pinch of Flaky Sea Salt
  • A Scoop of Vanilla Ice Cream

Instructions

  • Start by prepping your peach – wash it, slice it in half, and remove the pit. Place the peach halves cut-side down in an air fryer or baking dish.
  • Preheat your oven or air fryer to 400°F, then pop in the peach. Cook for 8 minutes in the air fryer or 12 minutes in the oven.
  • While the peach cooks, mix up the olive oil mixture by combining olive oil, coconut sugar, and vanilla extract in a small bowl.
  • When the peach is done, carefully flip each half so the cut side is facing up. Spoon the olive oil mixture into the center of each peach half.
  • Return the peaches to the oven or air fryer and cook for another 8 minutes in the air fryer or 12 minutes in the oven.
  • Once done, let the peach cool for a bit, then top it with a scoop of vanilla ice cream and a drizzle of olive oil if you like. Serve it up and enjoy your sweet summer treat!
