Savory Whipped Cottage Cheese and Tomatoes Bowl

Ingredients
**For the Creamy Cottage Cheese:**
- 1 pound cottage cheese We used Good Culture
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
**For the Marinated Tomatoes:**
- 2 cups cherry tomatoes cut into quarters
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: pita chips and crostini for serving
Instructions
- Blend cottage cheese, feta, and olive oil in a food processor until velvety smooth. Set aside.
- In another bowl, mix tomatoes, parsley, basil, olive oil, salt, and pepper. Let it sit for 15 minutes.
- Spoon the luscious cottage cheese blend onto a low bowl or plate. Crown it with the marinated tomatoes.
- Dunk in with pita chips or crostini if you fancy.
- Keep the cottage cheese mix and tomatoes in separate containers in the fridge, and they’ll stay fresh for 2-3 days.
