Ingredients
  

**For the Creamy Cottage Cheese:**

  • 1 pound cottage cheese We used Good Culture
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil

**For the Marinated Tomatoes:**

  • 2 cups cherry tomatoes cut into quarters
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: pita chips and crostini for serving

Instructions
 

  • Blend cottage cheese, feta, and olive oil in a food processor until velvety smooth. Set aside.
  • In another bowl, mix tomatoes, parsley, basil, olive oil, salt, and pepper. Let it sit for 15 minutes.
  • Spoon the luscious cottage cheese blend onto a low bowl or plate. Crown it with the marinated tomatoes.
  • Dunk in with pita chips or crostini if you fancy.
  • Keep the cottage cheese mix and tomatoes in separate containers in the fridge, and they'll stay fresh for 2-3 days.
