If you don’t have a mini loaf tin, don’t worry! You can make one regular-sized loaf instead! Either way, this recipe is so delicious that you just have to try it (and did I mention you can make it all in a blender? 🤯).
Mini PB&J Banana Bread Loaves
Ingredients
In a blender, put in the following ingredients:
- 3 bananas
- 1/4 cup coconut sugar
- 1 tsp vanilla
- 1/3 cup peanut butter I used @georgiagrinders
- 3 eggs
- 3 cups almond flour
- 1/3 cup arrowroot or tapioca flour
- Pinch of salt
- 1 tsp baking powder
For the jam topping:
- 1/3 cup jam of your choice
Instructions
- Preheat your oven to 350F and grease a mini loaf pan or a regular-sized loaf pan with oil. You can also line it with parchment paper if you prefer.
- Blend all the ingredients until smooth. Then, pour the batter into the mini loaf pan or regular loaf pan. Swirl your favorite jam on top.
- Bake for 28-30 minutes or until a toothpick comes out clean. If you’re making one large loaf, it might take about 35 minutes.
- Store the mini loaves in an airtight container in the fridge for up to one week, or you can freeze them! Enjoy!
