If you don’t have a mini loaf tin, don’t worry! You can make one regular-sized loaf instead! Either way, this recipe is so delicious that you just have to try it (and did I mention you can make it all in a blender? 🤯).

Mini PB&J Banana Bread Loaves

Ingredients

In a blender, put in the following ingredients:

  • 3 bananas
  • 1/4 cup coconut sugar
  • 1 tsp vanilla
  • 1/3 cup peanut butter (I used @georgiagrinders)
  • 3 eggs
  • 3 cups almond flour
  • 1/3 cup arrowroot or tapioca flour
  • Pinch of salt
  • 1 tsp baking powder

For the jam topping:

  • 1/3 cup jam of your choice


Instructions

  1. Preheat your oven to 350F and grease a mini loaf pan or a regular-sized loaf pan with oil. You can also line it with parchment paper if you prefer.
  2. Blend all the ingredients until smooth. Then, pour the batter into the mini loaf pan or regular loaf pan. Swirl your favorite jam on top.
  3. Bake for 28-30 minutes or until a toothpick comes out clean. If you’re making one large loaf, it might take about 35 minutes.
  4. Store the mini loaves in an airtight container in the fridge for up to one week, or you can freeze them! Enjoy!
