Ingredients

- **For the Dressing:**
- ¼ cup of olive oil
- Juice of 1 lemon
- 1 teaspoon of vinegar
- Salt (to your liking)
- ½ teaspoon of pepper
- 1 teaspoon of oregano
- 1 teaspoon of cumin
- 1 tablespoon of honey
**For the Salad:**
- 2 cans (15 ounces each of chickpeas)
- 1 can (15 ounces of black beans)
- 2 cups of chopped cucumbers
- 1 large red onion (chopped)
- ½ cup of fresh parsley
- ½ cup of fresh cilantro
- 2 cups of chopped tomatoes
- 1 cup of chopped green olives
- 1 cup of chopped kalamata olives
Instructions
- In a small bowl, whisk together all the dressing ingredients until well combined.
- Chop up all those veggies – get them ready for the flavor party!
- In a large bowl, toss together all the ingredients – the beans, cucumbers, onion, parsley, cilantro, tomatoes, green olives, and kalamata olives.
- Pour that fantastic dressing over the top and give it a good mix.
