Ingredients
**For the Dressing:**
¼
cup
of olive oil
Juice of 1 lemon

teaspoon
of vinegar
Salt
to your liking
½
teaspoon
of pepper

teaspoon
of oregano
1
teaspoon
of cumin
1
tablespoon
of honey
**For the Salad:**
2
cans
15 ounces each of chickpeas
1
can
15 ounces of black beans
2
cups
of chopped cucumbers
1
large red onion
chopped
½
cup
of fresh parsley
½
cup
of fresh cilantro
2
cups
of chopped tomatoes
1
cup
of chopped green olives
1
cup
of chopped kalamata olives
Instructions
In a small bowl, whisk together all the dressing ingredients until well combined.
Chop up all those veggies – get them ready for the flavor party!
In a large bowl, toss together all the ingredients – the beans, cucumbers, onion, parsley, cilantro, tomatoes, green olives, and kalamata olives.
Pour that fantastic dressing over the top and give it a good mix.
