  • **For the Dressing:**
  • ¼ cup of olive oil
  • Juice of 1 lemon
  • 1 teaspoon of vinegar
  • Salt to your liking
  • ½ teaspoon of pepper
  • 1 teaspoon of oregano
  • 1 teaspoon of cumin
  • 1 tablespoon of honey

**For the Salad:**

  • 2 cans 15 ounces each of chickpeas
  • 1 can 15 ounces of black beans
  • 2 cups of chopped cucumbers
  • 1 large red onion chopped
  • ½ cup of fresh parsley
  • ½ cup of fresh cilantro
  • 2 cups of chopped tomatoes
  • 1 cup of chopped green olives
  • 1 cup of chopped kalamata olives


  • In a small bowl, whisk together all the dressing ingredients until well combined.
  • Chop up all those veggies – get them ready for the flavor party!
  • In a large bowl, toss together all the ingredients – the beans, cucumbers, onion, parsley, cilantro, tomatoes, green olives, and kalamata olives.
  • Pour that fantastic dressing over the top and give it a good mix.
