Jalapeño Cheddar Tuna Melt

  • 12- ounce can of solid white albacore tuna (drained)
  • 1/3 cup of mayonnaise
  • 1/4 cup of thinly sliced green onions
  • 3 to 4 tablespoons of sweet yellow corn
  • 1/2 teaspoon of salt (adjust to taste)
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of red pepper flakes
  • 1 teaspoon of yellow mustard
  • 1 tablespoon of chopped parsley
  • 1 cup of shredded sharp cheddar cheese
  • 1 jalapeño (thinly sliced)
  • 4 to 5 slices of your favorite bread
  1. Preheat your oven or air fryer to 400°F.
  2. In a bowl, mix together the drained tuna, mayonnaise, green onion, corn, black pepper, salt, red pepper flakes, yellow mustard, and parsley.
  3. Spread the tuna mixture onto the sliced bread. Top with shredded cheddar cheese and 3 to 4 slices of jalapeños.
  4. Place in the air fryer or oven for 7 to 9 minutes until the cheese is golden and bubbly on top, and the bread is crispy. If needed, broil for an additional 2 to 3 minutes.
  5. Remove from the oven and enjoy your warm, delicious Jalapeño Cheddar Tuna Melt!
