Healthy Apple Cinnamon Rolls

Ingredients

Dough:

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 2 tsp cinnamon
  • 1/4 cup cane or coconut sugar
  • 1/2 tsp salt
  • 1/4 cup grass-fed or vegan butter
  • 3/4 cup oat milk or any other milk alternative

Apple Filling:

  • 1 tbsp coconut oil or more butter
  • 2 large honeycrisp apples diced (about 2 cups)
  • 1/2 Tbsp cinnamon
  • 1 tbsp sugar
  • 1 tsp vanilla extract

Apple Frosting:

  • Remainder of apple juices
  • 1/4-1/3 cup powdered sugar or more for desired consistency

Instructions

  • In a saucepan, melt butter and milk until just combined, then set aside.
  • In a large bowl, combine flour, baking powder, cinnamon, sugar, and salt. Add the melted butter and milk mixture, then mix until a dough forms.
  • Knead the dough briefly, then let it rest for 15 minutes.
  • Meanwhile, sauté diced apples with coconut oil, cinnamon, and sugar until soft. Drain the juices and set aside.
  • Preheat oven to 350°F and roll out the dough on a floured surface.
  • Spread the drained cinnamon apples evenly over the dough, then tightly roll it into a log. Slice into individual pieces using floss.
  • Grease a baking dish, place the cinnamon rolls inside, and bake for 25 minutes or until golden brown.
  • Prepare the frosting by whisking powdered sugar into the remaining apple juices, then drizzle over the baked rolls.
  • Serve warm and enjoy!

Notes

  • Avoid overworking the dough.
  • Drain the juices from the sautéed apples.
  • Use leftover juices for the apple frosting.
