Healthy Apple Cinnamon Rolls
Servings 8 CINNAMON ROLLS
Ingredients
Dough:
- 2 cups all-purpose flour
- 1 Tbsp baking powder
- 2 tsp cinnamon
- 1/4 cup cane or coconut sugar
- 1/2 tsp salt
- 1/4 cup grass-fed or vegan butter
- 3/4 cup oat milk or any other milk alternative
Apple Filling:
- 1 tbsp coconut oil or more butter
- 2 large honeycrisp apples diced (about 2 cups)
- 1/2 Tbsp cinnamon
- 1 tbsp sugar
- 1 tsp vanilla extract
Apple Frosting:
- Remainder of apple juices
- 1/4-1/3 cup powdered sugar or more for desired consistency
Instructions
- In a saucepan, melt butter and milk until just combined, then set aside.
- In a large bowl, combine flour, baking powder, cinnamon, sugar, and salt. Add the melted butter and milk mixture, then mix until a dough forms.
- Knead the dough briefly, then let it rest for 15 minutes.
- Meanwhile, sauté diced apples with coconut oil, cinnamon, and sugar until soft. Drain the juices and set aside.
- Preheat oven to 350°F and roll out the dough on a floured surface.
- Spread the drained cinnamon apples evenly over the dough, then tightly roll it into a log. Slice into individual pieces using floss.
- Grease a baking dish, place the cinnamon rolls inside, and bake for 25 minutes or until golden brown.
- Prepare the frosting by whisking powdered sugar into the remaining apple juices, then drizzle over the baked rolls.
- Serve warm and enjoy!
Notes
- Avoid overworking the dough.
- Drain the juices from the sautéed apples.
- Use leftover juices for the apple frosting.
