Grinder Salad Sandwich

Ingredients
**Garlic & Herb Butter:**
- 1/4 cup melted unsalted butter
- 1 tablespoon finely chopped parsley
- 2 teaspoons finely minced garlic
- 1 tablespoon grated parmesan
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
**Grinder Salad:**
- 1 small head of iceberg lettuce
- 1/4 cup chopped pepperoncinis
- 1/2 large red onion thinly sliced
- 1/2 cup mayo
- 1 tablespoon vinegar red, distilled, or apple cider
- 3 tablespoons grated parmesan
- 2 tablespoons finely chopped parsley
- 2 teaspoons minced garlic
- 1 to 2 teaspoons yellow mustard
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt more to taste
**Other:**
- Bread of choice dutch crunch, hoagie roll
- Deli meats of choice turkey, pastrami, salami, etc.
- Sliced tomatoes
- Avocado
- Cheese of choice
Instructions
**1. Make the Garlic and Herb Butter:**
- Mix melted butter, parsley, garlic, parmesan, black pepper, and oregano in a small bowl. Set aside.
**2. Prepare the Grinder Salad:**
- Soak sliced red onion in water and ice for at least 20 minutes to reduce bitterness. Drain.
- Make dressing by combining mayo, vinegar, garlic, parsley, mustard, parmesan, salt, black pepper, red pepper flakes, and Italian seasoning until smooth. Toss lettuce, red onion, pepperoncinis, and dressing in a large bowl. Taste and adjust seasoning.
**3. Prepare the Sandwich:**
- Preheat oven to 350°F.
- Brush garlic butter on bread tops. Place cheese on bread bottoms on a baking tray, and bake for 6 to 8 minutes until bread is toasted and cheese is melted.
- Assemble sandwiches with deli meats, tomatoes, avocado (if using), and plenty of grinder salad. Top with bread, press down, and cut in half to enjoy!
