The Grinder Sandwich that’s been blowing up on TikTok is even better than you’d expect! It’s super quick and easy, and I’m already looking forward to making it again for our next picnic.

This Italian Grinder Sandwich isn’t your ordinary deli sandwich; it’s the stuff dreams are made of! Packed with the finest deli meats, a zesty slaw of iceberg lettuce and pepperoncinis, and bread so soft it’s baked in garlic and herb butter, this sandwich has taken TikTok by storm. And now, we’re going to make it even more amazing!

Ingredients
  

**Garlic & Herb Butter:**

  • 1/4 cup melted unsalted butter
  • 1 tablespoon finely chopped parsley
  • 2 teaspoons finely minced garlic
  • 1 tablespoon grated parmesan
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano

**Grinder Salad:**

  • 1 small head of iceberg lettuce
  • 1/4 cup chopped pepperoncinis
  • 1/2 large red onion thinly sliced
  • 1/2 cup mayo
  • 1 tablespoon vinegar red, distilled, or apple cider
  • 3 tablespoons grated parmesan
  • 2 tablespoons finely chopped parsley
  • 2 teaspoons minced garlic
  • 1 to 2 teaspoons yellow mustard
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt more to taste

**Other:**

  • Bread of choice dutch crunch, hoagie roll
  • Deli meats of choice turkey, pastrami, salami, etc.
  • Sliced tomatoes
  • Avocado
  • Cheese of choice

Instructions
 

**1. Make the Garlic and Herb Butter:**

  • Mix melted butter, parsley, garlic, parmesan, black pepper, and oregano in a small bowl. Set aside.

**2. Prepare the Grinder Salad:**

  • Soak sliced red onion in water and ice for at least 20 minutes to reduce bitterness. Drain.
  • Make dressing by combining mayo, vinegar, garlic, parsley, mustard, parmesan, salt, black pepper, red pepper flakes, and Italian seasoning until smooth. Toss lettuce, red onion, pepperoncinis, and dressing in a large bowl. Taste and adjust seasoning.

**3. Prepare the Sandwich:**

  • Preheat oven to 350°F.
  • Brush garlic butter on bread tops. Place cheese on bread bottoms on a baking tray, and bake for 6 to 8 minutes until bread is toasted and cheese is melted.
  • Assemble sandwiches with deli meats, tomatoes, avocado (if using), and plenty of grinder salad. Top with bread, press down, and cut in half to enjoy!
