Gluten Free Apple Bread

Ingredients
APPLE LOAF
- 1/2 cup vegan butter or regular butter
- 2 eggs
- 1/3 cup sugar or coconut sugar
- 1/2 cup almond milk or any other milk alternative
- 1 tsp vanilla extract
- 3 cups almond flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup diced honey-crisp apples
CINNAMON AND SUGAR MIXTURE
- 1/3 cup sugar
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350°F and prepare a loaf pan by coating it with non-stick spray and lining it with parchment paper.
- In an electric mixer, beat the eggs and sugar on high speed for about 2 minutes or until creamy.
- Gradually add the melted vegan butter, almond milk, and vanilla extract, mixing until combined.
- Add the almond flour, salt, baking powder, and baking soda, and mix until just combined.
- Fold in the diced apples.
- Pour about 2/3 of the batter into the prepared loaf pan, then sprinkle 2/3 of the cinnamon and sugar mixture over it. Repeat with the remaining batter and cinnamon-sugar mixture.
- Using a knife or toothpick, make zig-zag motions to mix the cinnamon and sugar on top.
- Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before slicing.
Notes
- Coat your loaf pan with non-stick spray and line it with parchment paper to prevent sticking.
- Bake only until a toothpick inserted comes out clean.
- Since this is an almond flour-based bread, it will be softer than traditional bread.
- For the best results, use red apples, like honey-crisp!
