APPLE LOAF

  • 1/2 cup vegan butter or regular butter
  • 2 eggs
  • 1/3 cup sugar or coconut sugar
  • 1/2 cup almond milk or any other milk alternative
  • 1 tsp vanilla extract
  • 3 cups almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup diced honey-crisp apples

CINNAMON AND SUGAR MIXTURE

  • 1/3 cup sugar
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 350°F and prepare a loaf pan by coating it with non-stick spray and lining it with parchment paper.
  • In an electric mixer, beat the eggs and sugar on high speed for about 2 minutes or until creamy.
  • Gradually add the melted vegan butter, almond milk, and vanilla extract, mixing until combined.
  • Add the almond flour, salt, baking powder, and baking soda, and mix until just combined.
  • Fold in the diced apples.
  • Pour about 2/3 of the batter into the prepared loaf pan, then sprinkle 2/3 of the cinnamon and sugar mixture over it. Repeat with the remaining batter and cinnamon-sugar mixture.
